Maraschino Cherry Bars

Three layers tall and topped with coconut, irrisistable Maraschino Cherry Bars will disappear fast.

2 cups all-purpose flour

 

1/3 cup granulated sugar

¾ cup butter

Preheat oven to 350 degrees. In a large bowl, combine flour, sugar and butter; blend until crumbly. Press mixture into ungreased 13 x 9-inch pan. Bake 12 to 15 minutes until lightly browned.

2 large eggs, slightly beaten

1 cup brown sugar, firmly packed

1/3 cup all-purpose flour

1½ teaspoons baking powder

½ teaspoon salt

½ teaspoon vanilla

1 (10-ounce) jar maraschino cherries, drained and chopped, reserving juice

½ cup chopped walnuts

In bowl, combine all filling ingredients; mix well. Pour over crust. Bake 20 to 25 minutes until toothpick inserted in center comes out clean. Cool.

2 tablespoons butter, softened

2½ cups powdered sugar

3 to 4 tablespoons reserved cherry juice

3 tablespoons flaked coconut

In small bowl, combine all frosting ingredients except coconut; beat until light and fluffy. Spread frosting over cooled bars; sprinkle with coconut. Makes 3 to 4 dozen.
