CLAM FRITTERS

1/2 cup milk

Two eggs well beaten

1 cup fine breadcrumbs or fine crashed saltine crackers

1 teaspoon salt

1/3 teaspoons pepper

2 cups minced clams

Mix ingredients together, and fold in:

Two egg whites, stiffly beaten

Oil for frying

Drop batter by tablespoons full into hot oil, frying on one side and turning once.

Serve with tartar sauce or ketchup mixed with horseradish.

BREAD PUDDING WITH RUM SAUCE

The easy way to make bread pudding!

15 oz loaf white sandwich bread – dried slightly

1 ½ cups sugar

5 eggs

3 ½ cups canned milk

2 tbsp vanilla

Tear bread into a large bowl. Add the rest of ingredients and stir until well mixed.

Butter a 13 x 9 dish and pour mixture in. Let is set to come to room temperature-about 45 minutes. Preheat oven to 350% and bake 45 minutes until puffed and golden. Let stand for 30 minutes before slicing.

RUM SAUCE

¼ pound butter

1 cup sugar

1 egg

¼ cup white rum

Cream butter and sugar in mixer until light and creamy. On low add egg and mix well. Add rum and mix until blended. Then with the mixer on high, mix for 15 to 30 minutes until very light and fluffy. Serve on top of pudding. Sprinkle with cinnamon or nutmeg.

HAMBURGER PIE

This is a old standby for a lot of Old Timers in this area

1 1/2 pounds hamburger or mooseburger

1 can of cut green beans undrained

1 can of tomato soup undiluted

Instant or leftover mashed potatoes

Onion chopped – optional

Brown hamburger and opinions drain. Add one can of green beans and tomato soup heat till bubbly. Pour into casserole dish and top with mashed potatoes and sprinkle with paprika and butter. B. Bake in a 350° oven until potatoes are lightly browned. Serves six

KITCHEN SINK COOKIES

1 cup of room temp butter

2 cups of brown sugar

2 eggs

2 teas vanilla

2 1/3 cup flour

1 teaspoon soda

½ teaspoon salt

2 cups of rolled oats

2 cups of chocolate chips

1 ½ cups butterscotch chips

1 cup of walnuts of pecans – chopped

Heat oven to 375% (yes)

Mix butter and sugar until creamed – add eggs and blend well. Mix another bowl add flour, soda, salt and oats. Add to the creamed mixture and blend well. Stir in the ships and nuts. Drop by tablespoon full on cookie sheet and bake 8 to 10 minutes until slightly browned. NOTE: Add: 1 cup of coconut if you desire. Craisins-1/2 cup. M&M’s ½ cup
