French Toast

CAPTION: Use day-old bread to make French Toast or simple cinnamon toast. To make cinnamon toast, toast bread, then butter while hot, sprinkling with a cinnamon sugar, made with a mixture of one part cinnamon to four parts granulated sugar.

8 slices day-old bread

1¼ cups milk

2 large eggs

1 to 2 teaspoons cinnamon

1/2 teaspoon vanilla

Pinch salt

Butter or vegetable oil

Heat a small amount of butter or oil (or a combination of both) over medium heat on a griddle until griddle is hot. While griddle is heating, combine milk, eggs, cinnamon, vanilla and salt in shallow dish, mixing well.

Dip both sides of bread slices into mixture, allowing excess to drip back into dish. Fry bread on each side until golden brown. (If griddle is not hot enough, raise heat slightly.)

Serve with syrup, confectioners’ sugar or jam.
