If you have left over halibut us it in this recipe otherwise, simmer halibut pieces in
2 to 3 quarts of water and 1/4 cup salt and 1/4 cup sugar-tablespoon black pepper.
Turn off heat and let halibut (or salmon ) set in hot water until cool. Drain and use.
