HALIBUT CHEESE CHOWDER

This colorful, hardy chowder is quick to fix,
elegant to serve and delicious to eat.
2 tblsp olive oil
1/2 cup each chopped onion, celery, carrots, green and red bell pepper
2 pounds of pounds of halibut - either fresh or left over cooked cut into
bite sized pieces.
