2 salmon fillets
4 tsp salt
ground pepper to taste
2 Tbsp plus 2 tsp brown sugar
2 Tbsp liquid smoke
Place fillets, skin side down, side by side in greased shallow baking pan. Sprinkle with salt, pepper, and brown sugar; drizzle liquid smoke over top.
Cover and refrigerate 4-8 hours. Drain any liquid. Bake at 350 F for 30-45 minutes or until salmon flakes with a fork. Yields 8 servings.
