No-fail seven-minute frosting

3 large egg whites, room temperature

Cupcakes topped with billowy swirls of "No-Fail Seven-Minute Frosting" are simply irresistible. The success of this recipe depends on the use of a double-boiler and hand-held electric mixer.

3/4 cup granulated sugar

3/4 cup light corn syrup

1 tablespoon water

1 teaspoon vanilla extract

Partially fill bottom half of a double boiler with cold water; place the egg whites, sugar, corn syrup, water and vanilla in the top half.

Place the double boiler on stove, over medium-high heat.

Using a hand-held electric mixer, beat mixture constantly until frosting stand in peaks, approximately 7 minutes.

Remove from heat and spread frosting on cooled cupcakes.

Makes enough frosting for 24 medium-size cupcakes.
