Tips for using fresh lemons in recipes

One medium-sized lemon will yield 2-3 tablespoons of juice.

Zest lemons before juicing.

Lemons will yield more juice if they are brought to room temperature.

To squeeze maximum juice, lemons may be pierced with a fork and microwaved on medium power for 15-20 seconds.

Fresh squeezed lemon juice and zest may be frozen for up to 6 months. Freeze juice in ice cubes trays, then freeze and bag the solid cubes.
