Chocolate Cookie Crumb Crust for 1 (9-inch) pie dish or springform pan

Posted: Wednesday, April 07, 2010

1 cups (7 ounces) finely ground chocolate wafers

2 tablespoons confectioners' sugar

2 teaspoon unsweetened, natural cocoa (like Hershey's)

6 tablespoons ( stick) unsalted butter, melted

Pinch salt

Preheat oven to 350 degrees. In a medium mixing bowl, blend cookie crumbs with sugar, cocoa and salt. Drizzle with butter, stirring until crumbs are evenly moistened. Spread crumbs evenly onto the bottom and up to the rim of 9-inch pie dish, or pat crumbs onto the bottom and partly up the sides of a lightly buttered 9-inch springform pan. (To make spreading crumbs easier, cover crumbs with a piece of plastic wrap, before patting onto the bottom and sides of the pan.)

Bake for 8 minutes.

Remove pan from oven to a wire rack to cool completely before using.

Makes one 9-inch pie shell.
