Caribbean Black Bean Chili

4 cups dried black beans

1/4 cup olive oil

4 medium onions, diced

1/4 cup chopped garlic

3 tablespoons chopped jalapenos

1 12 ounce can diced green chilies

1/4 cup ground cumin

2 tablespoons sugar

2 teaspoons salt

2 teaspoons black pepper

3/4 cup lime juice

2 teaspoons lime zest

28 ounce can of crushed tomatoes

6 cups of water

Put beans in a large pot and cover with water by two inches. Bring to boil, then reduce heat to simmer for one hour. Drain water from pot, set aside. In another large pot heat olive oil untill hot, add onions and cook until just starting to brown. Add garlic, jalapenos and green chilies cook one minute longer. Add remaining ingredients and stir in black beans. Simmer covered one to two hours adding water as needed. Garnish with sour cream, chopped cilantro or corn tortilla chips.
