Fish Kebabs

1 cup olive oil

1/4 cup soy sauce, honey and vinegar

1/4 lemon juice or orange juice

1 clove garlic, minced

1 tablespoon prepared mustard

In a large bowl, combine all ingredients and set aside

Kebab preparation:

Choose the fish, fruit and vegetables to your liking

3 cups cubed, skinned salmon, halibut, cod

2 cups bite-sized firm banana, papaya, pineapple, orange wedges

2 cups chunked zucchini, carrot, tomato, mushroom, onion

Fold into marinade to coat. Refrigerate 2 hours. Skewer the fish, fruit and vegetables in an alternating sequence. Let rest for 1 hour before cooking.

For barbecuing and oven broiling, brush oil on grill to avoid any sticking. Turn skewers once.

Cook approximately 6 minutes. Serve on rice, pasta or couscous.

Serves 4-6.

Cooking note: Kids enjoy the preparation of this dish for the crunch, color and variety.
