1 pound fresh carrots
2 to 3 tablespoons olive oil
2 tablespoons orange-blossom honey
Sea salt and fresh ground black pepper
Preheat oven to 400 degrees. Scrub carrots, then cut into 2-inch long pieces, or, if carrots are small, leave whole. Simmer carrots in boiling water until crisp/tender, about 5 to 7 minutes; drain. In a small mixing bowl, mix honey with oil. Pour honey/oil mixture over carrots. Season with salt and pepper to taste. Bake for about 20 to 30 minutes until carrots are browned and honey has caramelized, turning several times during baking. Makes 4 to 6 servings.
