Rhubarb bars

Crust:

1 1/2 cups oatmeal

1 1/2 cups flour

1 cup brown sugar

1/2 tsp soda

1 cup shortening

1/2 cup chopped nuts

Filling:

3 cups raw chopped rhubarb

1 1/2 cups white sugar

2 tbs corn starch

1/4 cup water

1 tsp vanilla

3 drops red food coloring (if desired)

Mix ingredients for crust until crumbly. Pat 3/4 of oatmeal mix into a 9-by-13-inch pan. Dissolve corn starch in water. Mix all ingredients for filling together and cook until thick. Pour filling on top of crust in pan. Sprinkle remaining oatmeal mixture on filling. Bake at 350 degrees for 30 to 35 minutes. Cut into bars when cool.

Bakers note: This is a wonderful bar recipe and I usually make it for the senior bake sale much to the delight of customers. It has been in my family for many years as rhubarb grows well in Wisconsin and Alaska.
