8 pieces raw chicken thighs (or pieces you prefer)
1/4 cup melted margarine
Favorite herb seasonings, such as lemon pepper, salt, garlic, poultry seasoning or an all-purpose seasoning.
Enough dried potato flakes to coat chicken
Preheat oven to 400 degrees. Rinse chicken in cold water and pat dry. Coat both sides of chicken parts in melted margarine, lay skin side down in 13x9 inch baking dish. Sprinkle with desired seasonings and then sprinkle potato flakes on evenly to coat. Bake uncovered for one hour. Do not turn chicken. Serves eight.
