Nikiski grad takes over Coffee Concepts

Posted: Tuesday, June 29, 2004

There's a new dcor, new menu, new drinks, new atmosphere, and a new owner at Coffee Concepts on the Sterling Highway in Soldotna. The new homegrown entrepreneur from Nikiski is Sarah Superman. Sarah, a Y2K graduate from Nikiski High School, headed to Eastern Washington University, and has now returned to the Kenai Peninsula to go into business for herself, "I've always wanted to have my own business. I enjoy cooking and often thought of opening a restaurant, but this is pretty close to my original dream" said Superman on her opening day.

Some of those folks coming by to congratulate Sarah last week included her former fourth grade teacher Donna Peterson, now Dr. Donna Peterson KPBSD Superintendent of Schools, "She brought me flowers to congratulate me and was really excited for me," said Sarah. Superman has created the new dcor herself and has added a few specialty items like homemade soup, and any sandwich you can imagine and soon will be offering those delicious low-carb wraps for lunch. "I love serving and helping the people that come in here, visiting with them and hearing what's happening in their lives, it makes me fell like a better person to be able to do that," said Superman. Sarah admits that it's quite a drive from Nikiski to come by for lunch, but admits that she is seeing some of her old friends and former Bulldogs at her new business. Sarah's Coffee Concepts is open every morning at 7:00am and doesn't close until 5:30pm except on Saturdays when she is open 8:00am-4:00pm. Sarah is also a guitarist, singer and songwriter and in the future would like to add some live entertainment for the enjoyment of customers. For orders to go, call Sarah at 260-3255.
