Making the most of moose once it's in the kitchen

Simple Moose Marinade

1/4 cup water

1/2 teaspoon pepper

1/2 cup cooking oil

1/4 teaspoon garlic salt

Mix and use as marinade for 3-4 hours.

n Fruity Moose Stew

1-2 pounds cubed stew meat

2-3 pounds vegetables (your choice)

1/4 cup dried prunes or apples

1 medium onion

1/4 cup barley

2 tablespoons seasoned salt 2 teaspoons pepper

Mix ingredients in a large stew pot, bring to a boil and simmer for one hour or until vegetables are soft and onion is clear.

Northern-style Moose Chili

1 pound coarse-ground moose (15 percent beef tallow)

1 medium onion

1 teaspoon garlic powder

1 can kidney beans (16 ounce)

1 can corn (16 ounce)

1 bell pepper (2 if small)

Mix ingredients, except meat, in a large pot and bring to a slow boil.

Brown the meat while the pot is heating and add to the mix. Reduce heat and simmer for one hour or until onion is clear.

Alaskan Boiled Moose Dinner

1-2 pounds moose cut into cubes

1-2 pounds vegetables (your choice)

1 tablespoon of salt

Bring moose and vegetables to a boil in separate pots. Reduce heat on vegetables and simmer until soft. Pour parboil water off moose, refill pot and bring to boil again. Add salt to meat pot.

Boil until tender (test with a fork).

Serve with butter and horseradish on the side.
