Buttermilk Banana Bread

1/2 cup (1 stick) butter

My favorite recipe for banana bread is one made with buttermilk. It can be prepared with or without nuts and keeps extremely well.

2 large eggs, room temperature

1-1/2 cups granulated sugar

2 cups sifted all-purpose flour

1 teaspoon vanilla

1 teaspoon baking soda

1/2 cup buttermilk

3 ripe bananas (mashed)

1/2 cup nuts, optional

Preheat oven to 325 degrees. Grease and flour a 9-inch tube pan.* Cream butter and sugar until fluffy. Add eggs, one at a time and beat well. Add vanilla. Sift flour with soda. Add flour mixture to creamed mixture, alternately with buttermilk. Mix in bananas, then nuts, if adding. Bake for 1 hour or until cake tests done.

*Kitchen Ade Note: May also be baked in a 9 x 5 x 3-inch loaf pan with an increased baking time of 1 hour and 15 minutes.
