Frozen peas and instant mashed potatoes, cooked in the microwave oven according to package directions, are tasty sides for meatloaf.
1 1/2 pounds lean ground
beef or turkey
1 egg, slightly beaten
1/2 cup breadcrumbs
3 tablespoons dry onion soup mix
1/8 teaspoon ground black
2 tablespoons water
1 tablespoon Worcestershire
1/4 cup ketchup or barbecue
Additional barbecue sauce for
Mix beef or turkey with egg, breadcrumbs, soup mix, pepper, water, Worcestershire sauce and ketchup.
Shape into a round loaf and place in a microwave-safe dish. (A microwave-safe Bundt pan may also be used.)
Cover with waxed paper and cook on high for 10 minutes, turning dish a quarter turn after 5 minutes, if microwave is not equipped with a turntable.
Drain meatloaf, cover with foil, and let stand five minutes before inverting onto serving dish. Baste lightly with barbecue sauce and slice.
