2 cups milk
1/2 cup heavy cream
1/2 cup sugar
6 tablespoons cocoa, regular or Dutch-process
2 tablespoons cornstarch
1/2 cup semisweet chocolate chips
2 tablespoons butter
11/2 teaspoons vanilla
In a medium saucepan, combine milk, heavy cream, sugar, cocoa and cornstarch. Place saucepan over medium-low heat and cool until mixture thickens.
Remove from heat and stir in chocolate chips, butter and vanilla, stirring until chocolate chips and butter are melted.
Pour into an 8 by 4 by 2 1/2-inch loaf pan.
Freeze until firm.
Kitchen Ade note: For ease of scooping, place frozen ice cream in refrigerator to soften about 5 minutes before scooping.
This same recipe may be poured into 8 Popsicle molds for making delicious fudgesicles.
