1/2 cup (1 stick) butter
2 large eggs
1 cup firmly packed brown sugar
2 1/2 cups sifted all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1/4 cup wheat germ
2 cups sweetened applesauce
1/4 cup bourbon (or apple cider)
3/4 cup finely chopped walnuts
Preheat oven to 325 F.
Grease and flour one 9-by-5-by-3-inch loaf pan.
Let butter and eggs warm to room temperature. Butter should be soft.
In a large bowl, combine room-temperature ingredients with brown sugar, flour, baking soda, salt, wheat germ, applesauce and bourbon (or cider). Beat at medium speed for three minutes, scraping down the sides of the bowl. Stir in nuts. Pour into prepared pan.
Bake for 1 hour and 20 minutes or until the center springs back when lightly pressed. Cool on a wire rack from 10 minutes. Loosen edges with a knife. Cool completely on a wire rack and sprinkle with powdered sugar.
This recipe contains alcohol and should be marked when made so children don't accidentally eat it.
