1 cup butter
1 cup sugar
2 tablespoon milk
1 teaspoon pure vanilla
2 1/2 cups all-purpose flour
3/4 cup finely chopped green and red candied cherries
1/2 chopped pecans (optional)
3/4 cup flaked sweetened coconut
Preheat oven 375 F.
In a large bowl, cream butter and sugar. Blend in milk and vanilla. Stir in flour, cherries and nuts. Mix well. Form dough into a 2-inch thick log.
On a clean surface, spread a layer of coconut. Roll the cookie log in coconut. Slice 1/4- to 1/2-inch thick. Place on an ungreased cookie sheet. Bake for 10 to 12 minutes. Makes three to five dozen, depending on thickness.
