This recipe also works great for gingerbread houses.
5 cups unsifted flour
1 1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1 cup soft shortening
1 cup sugar
1 cup dark molasses
Sift flour, salt, baking soda, ginger, nutmeg, allspice and cinnamon together in a small bowl. Set aside. In a large bowl, using an electric mixer, cream shortening and sugar together until light and fluffy. Blend in molasses and water.
Add sifted dry ingredients, blending until smooth. Split dough into two equal portions, pat into rounds, wrap in plastic and chill for two to three hours. Roll the dough and cut into desired shapes. Bake at 350 F for 10 to 12 minutes, or until the back of the cookie is lightly browned.
