Truffles

1 12-ounce package chocolate chips

1/2 cup (1 cube) butter or margarine

1 1/2 cup powdered sugar

2 eggs unbeaten

2 teaspoons pure vanilla

1/2 teaspoon peppermint extract.

Prepare cookie sheet by covering with wax paper. Set aside.

Melt chocolate chips in microwave-safe bowl on high for one minute, stir, then continue to microwave until chips are just melted. Set aside.

In a separate bowl, combine remaining ingredients and beat until light and creamy. Add melted chips to egg mixture and stir until just combined. Let set for two to three minutes.

Using a teaspoon, scoop out small portions and set on prepared cookie sheets. Freeze until firm.

Store candy in freezer in an airtight container until ready to serve.
