Ligonberry Nut Bread

2 cups Alaskan lingonberries

(commercial cranberries can be used but should be cut in half)

3/4 cups nuts, chopped

1 tsp. grated orange rind

2 tbsps. melted butter

Sift together:

2 cups all purpose flour

1 cup plus 2 tbsps. white sugar

1 3/4 tsp. baking powder

1 tsp. salt

1/2 tsp. baking soda


1 egg (unbeaten)

1/3 cup orange juice

1/4 cup water

Stir into the egg and juice mixture the melted butter. Make a well in center of dry ingredients and add the liquid mixture all at once. Stir only enough to moisten all. Add the cranberries, nuts and orange rind. Bake after putting in a greased bread tin about 70 minutes at 350 degrees. After removing from oven let cool in pan for 10 minutes before taking from pan.
