Local cook's recipe featured in Best of Country Cakes

Posted: Tuesday, November 04, 2003

Cakes traditionally mark the special events in our lives, from birthdays and graduations to weddings and anniversaries. They also add a festive touch to holiday meals throughout the year and make scrumptious desserts for casual weeknight suppers and fancier company dinners.

Now beginner and well-seasoned bakers alike can turn to the new Best of Country Cakes cookbook from Taste of Home for an outstanding selection.

Among those cooks whose "best" recipe appears is Evy Gebhardt from Kasilof with her Rhubarb Custard Cake. The cookbook is chuck-full of 170 most-requested cake recipes from past issues of Taste of Home and other Reiman Publications magazines. You can make these recipes with confidence because each and every one is a tried-and-true favorite of a fellow cook's family. The Taste of Home Test Kitchen prepared and taste-tested each cake as well, selecting it for a book we call "The Best."

Whether the occasion calls for crowd-pleasing sheet-cakes, pretty layered cakes, elegant cake rolls, light and airy tube cakes, buttery pound cakes, individual cupcakes or fun upside-down cakes, you'll find them all in Best of Country Cakes.

Cream Cheese Sheet Cake, for example, with its fudgy chocolate glaze, is a real crowd-pleaser. "It's always popular at potlucks and parties," says Gaye Mann of Washington, North Carolina, who shared the recipe. "It's not uncommon to see folks going back for second or even third slices of this tender, buttery cake."

The first time Esther McCoy of Dillonvale, Ohio made festive, flavorful cranberry Bundt cake was for Thanksgiving dinner several years ago. "Since then, it's become our family traditional holiday dessert," she relates.

Bonnie Malloy often serves Raspberry Walnut Torte for dinner parties in her Norwood, Pennsylvania home or whenever a special dessert is called for. "This cake is delicious and very pretty," she says. "It takes a little time to prepare but is well worth the extra effort."

Helpful tips sprinkled throughout the cookbook will serve as a guide when making any of these beautiful cakes, tips for cooling, cutting and storing cakes, and so much more. Most of the cakes are pictured in full-color photos. Any way you slice it, Best of Country Cakes will help make an occasion extra special!
