Green tomato pie

Pastry for two crust pie

4 cups peeled, thinly sliced green tomatoes

1 1/4 cups sugar

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

4 to 5 tablespoons flour

2 tablespoons lemon juice

To peel tomatoes easily, immerse them in boiling water until the skins slip off (about 3 minutes). Blend together the sugar, cinnamon, nutmeg, salt, flour and lemon juice in a bowl. Toss mixture with the green tomatoes. Place the mixture in a pastry lined 9-inch pie pan. Adjust the top crust and flute the edges. Cut vents. Bake the pie in a hot oven -- 425 degrees -- until the tomatoes are soft and the crust is lightly browned, about 50 to 60 minutes.
