Baked Eggs

"Holiday brunch is one of the greatest ways to start your relaxed holiday morning. This recipe is a favorite of mine, and in addition to being simple to assemble, creates a lovely presentation. The recipe is suitable for a larger gathering, as it makes 10-12 servings, but can easily be reduced for smaller families. The dish does reheat beautifully in the microwave, so consider making the full batch."

16 eggs

3/4 Cup sour cream

1 Cup half & half

1 1/2 Cups grated cheddar cheese

2 Cups diced ham or cooked, crumbled sausage

1 Tablespoon minced chives

1/2 Cup chopped mushrooms

1/2 Cup chopped spinach

2 Tablespoons melted butter

350 degree oven. 9 x 13 pan sprayed with cooking oil.

Beat eggs, add remaining ingredients. Pour into baking pan.

Bake 45 minutes until light golden on top. Allow to sit 5 minutes before cutting.

(Note: both mushrooms and spinach are optional depending on taste. You can also add chopped green pepper or chopped green onion if you wish)
