Quick Salmon Casserole

1 pint salmon drained (or two cups cooked salmon)

4 Tablespoons flour

1 Tablespoon margarine

1/4 Cup Ketchup ( I know, it sounds gross, but go with me on this)

1/2 Cup Milk

In sauce pan, stir above ingredients until warm and slightly thickened.

6- 8 medium potatoes cooked and mashed (or to speed it up, sub instant flakes, prepared)

In casserole dish (spray lightly with oil) put a layer of potatoes on bottom. Top with salmon ketchup mixture. Cover with the rest of the potatoes. Top with Grated Cheddar Cheese.

Bake about 15-20 minutes at 350 until heated through and cheese is melted.
