"My inspiration for this recipe was an old rum ball recipe that I have had for many years. I make cookies for our neighbors and friends for the holidays so I decided to come up with a more modern, low country cookie that is also very easy to make."
Audrey Boyn
2 cups vanilla wafers, crushed (about 44 wafers, or 5.6 ounces)
1 cup confectioner's sugar
1/4 cup light corn syrup
1 cup chopped pecans
3/4 cup sweet tea vodka*
Mix all together and form into small balls. Roll balls in additional confectioners' sugar and store in a covered container.
*Kitchen Ade Note: For the purposes of this recipe, I used Firefly brand sweet tea vodka. Makes about 25 to 30 cookies, depending on size of ball.
