1-1/2 cups shortening
2 cups granulated sugar, plus more for rolling cookies
1/2 cup dark molasses
2 large eggs
4 teaspoons baking soda
4 cups all-purpose flour
1 teaspoon ground cloves - generous
1 teaspoon ground ginger - generous
2 teaspoons ground cinnamon - generous
1 teaspoon salt
Melt shortening. Add sugar, molasses and eggs; beat well. Combine flour, soda and spices. Stir flour mixture into egg mixture, then beat. Chill dough in refrigerator overnight.
Form dough into 1-inch balls and roll in sugar.
Bake for 8 minutes, in a preheated 375 oven, and enjoy!
You should take them out of the oven before they "flatten." I always place them onto paper towels.
They will flatten once they are out of the oven.
