Carucci, the International Association of Culinary Professionals Cooking Teacher of the Year for 2002, has this fun and innovative idea for holiday gifts: layered cookie mixes.

Vacuum packaging means removing the air and storing ingredients without exposure to oxygen. It keeps layered cookie mixes fresh and easy to stir. Brown sugar stays soft and moist, flour stays dry, and chocolate chips and coconut stay fresh for a year.

"You'll enjoy the holiday season more if you make these gifts ahead, before the rush," Carucci said. "Save time by making several jars of layered cookie mix at once. If you vacuum package your Mason jars, your cookie mix ingredients will stay fresh much longer."
