This bar cookie left some of the cookie contest judges swooning for more. Marie's cookie recipe for walnut sandwich cookies took first place in the "shaped, molded, rolled refrigerator and no-bake" category.
1 cup almond paste
1 3/4 cup granulated sugar,
2 large eggs
1/2 teaspoon almond extract
1/2 pound (2 sticks) salted
3/4 cup granulated sugar
2 cups all purpose flour
Preheat oven to 350 degrees. In a mixer bowl, blend well the almond paste, 1 cup granulated sugar, eggs and almond extract. Let stand 1 hour.
In a separate bowl, mix butter with remaining 3/4 cup sugar until lightened. Gradually blend in flour. Pack half of dough mixture in a greased 9 x 9-inch baking pan. Spread almond paste mixture on top. Pat remainder of the dough on top of almond paste mixture.
Bake 40 to 45 minutes, then cool on wire rack in pan. Cut into squares when cool. Makes about 24 squares.
