Dry roasting spices in a cast-iron pan over a low flame is a great way to use up those older spices when it’s time to buy new seasonings. Try combining star anise with black peppercorn and lavender or mix coriander with allspice and cloves or then again you might try fennel with licorice root , dried orange peel and cinnamon.
Have fun combining those old spices into new scents.
